Left over khichdi lollipop

I have 1 cup approx khichdi in freeze...And 
Don't want to eat again . So I turn this khichdi to new version by adding only corn flour for binding and then adding spices . And the result is it finishes in within few minutes.

Left over khichdi lollipop

Ingredients
1 cup khichdi
2 table spoon corn flour
1/2 tea spoon salt
1 pinch hing
1 teaspoon chaat masala
1 tea spoon red chilli powder
2 tea spoon coriander powder
100 ml oil for frying

Method
1. Mix khichdi and corn flour.
2. Add all spices
3. Knead it without adding water.
4. Make small balls.
5. Dip fry in hot oil at medium flame.
6. Serve hot with green chutney or sauce.

Chocolate apple barfi

Chocolate Apple burfi
I made this for my kids as kids like sweet...They crave for chocolate. So I made this nutritious by adding apple.

Ingredients
1 big size apple
3 tea spoon dessicated coconut
1-1/2 table spoon Hersey coconut syrup
1/2 cup khoya
1/2 cup sugar or according to taste

Method
1 . Peel and chop apple into small pieces.
2. Now cook chopped apple till it become soft.
3. Now add khoya, dessicated coconut , chocolate syrup.
4. Roast till it become thick.
5. Now add sugar and cook till it become thik.
6. Pour this to greased plate .
7. Cool and cut into desired shape
8. Healthy barfi is ready.

Vegetable muffin khaman

This recipe is my from my kitchen's invention.
Actually was trying to make something else but seems that I'll not get success in that...So drop that idea and made this . This khanan is healthier version of khaman and the main thing....Time saving ...I made this in 2 minutes...In microwave., Microwave plus convection mode.
Normally khaman can be made at microwave mode...But I made in different mode as I used 1 aluminum mould.
So let's enjoy healthy and yummy khaman.
Ingredients
Gram flour- 2 tablespoon
Salt as per taste
Sour curd-  3 tea spoon.
Eno 1 tea spoon.
Sugar- 5 tea spoon (or as per taste)
Mustard seeds -1 tea spoon
Lemon juice -1 tea spoon
Grated carrot- 2 tea spoon
Green coriander paste - 2 tea spoon.
Turmeric powder- 1/2 tea spoon
Green chillies -2 cut into longitudinal.
Oil 2 tea spoon
Curry leaves -4
Method
1. Take besan, add salt, turmeric powder .
2. Add curd n make batter.
3. If needed add water.
4. Add carrot, green coriander paste.
5. Now add eno and mix.
6. Immediately transfer this batter to muffin mould.
7. Now cook in microwave plus convection mode at 170 degree for 1-2 minutes depending upon the quantity .
8. Cool and demould.
9. For tempering , heat oil, add mustard seeds, curry leaves, then green chillies.
10. Add 2 cup water, sugar, and lemon juice.
11. Boil till sugar melts.
12. Pour this water over khaman.
13 . Keep rest for 10 to 15 minutes so that it'll absorb water.
14 . Vegetable khaman is ready.
Note: you can also make this in steamer.

Two layered muffin khaman

For breakfast why don't try quick and healthy recipe .
Khaman is Gujarat's cuisine. I am giving a healthy twist which is eye catching and tasty , healthy and main thing it's time saving breakfast.

Ingredients.

Besan-1 cup
Curd- 2 tea spoon
Salt as per taste
Turmeric powder- 1/2 tea spoon
Grated beetroot- 1/4 tea spoon
Chopped red chillies-2
Sugar-3 tea spoon(or as per your taste)
Oil- 3 tea spoon
Lemon juice- 1 tea spoon
Eno - 1 tea spoon
Mustard seeds- 1 teaspoon

Method-
1. Take besan in bowl.
2. Add salt and curd to it.
3. Add rest of water to make a smooth batter.
4. Now divide this batter into two equal parts.
5. Two one part add turmeric powder.
6. To second part add beetroot.
7. Now add 1/2 teaspoon eno to red part and immediately transfer to silicon muffin mould.
8. Now microwave for 20 seconds.
9. Now add rest of the eno to yellow batter .
10. Immediately transfer this to muffin mould which has red one.
11. Now microwave for 50 second.(or depending upon the quantity of batter)
12. Cool and de mould from mould.
13. For tempering- heat oil. Add mustard seeds.
14. Add red chillies
15 . Add 1 cup water.
16. Add sugar, lemon juice.
17. Bring to boil.
18. Pour this to khaman.
19. Keep rest for 15 minutes so that khaman will absorb water.
20. Two layered muffin kaman is ready.

Star fruit ki sabji

Star fruit ( kamrakh)ki sabji
This is my mother's recipe.
I asked her before making this sabji.
Star fruit is citrus in nature. So I added little sugar. So this sabji taste khati mitti. You can eat this sabji with roti or parantha. When we cook this sabji it leaves little water , so we don't add water in this sabji.


Take 250 gram star fruit.
Cut into pieces.
Heat oil
Add hing jeera
Add chopped star fruit.
Add 1/2 tea spoon salt and 1/2 tea spoon turmeric powder.
Cook till it become soft. It takes only 5 minutes to become it soft.
Add 2 tea spoon coriander powder, 1 tea spoon garam masala, 1/2 tea spoon red chilli powder and sugar(optional).
Cook for more 5 minute.
Star fruit sabji is ready.

Singhara flour muffins

We use singhara flour muffins in fast. Now Fast khatam, and if we have singhara flour left, then here is my innovative recipe singhara flour muffins , which is liked by everyone.


Ingredients
1 cup singhara flour
1/2 cup curd
1/2 tea spoon baking powder
1/4 tea spoon baking soda
1/2 cup powdered sugar
Few drops vanilla or any flavoured essence
1/4 cup olive oil
Cream and gems for decoration

Steps
1. Take all dry ingredients together.
2. Take all wet ingredients together and whisk properly.
3. Mix dry and wet ingredients.
4. Pour this batter to muffin moulds to 3/4.
5. Bake at preheated microwave at 180 degree for 10 to 15 minutes according to quantity .
6. Cool and de mould .
7. Decorate with cream and gems .
8. Enjoy yummy singhara flour muffins.

Falahari katori filled with fruit cream and roasted dry fruits

Why only eat khichdi and pakodi during fast
During fasting want something different that freshes mood as well as taste and main thing that's healthy too. So here is my innovative recipe .
Ingredients
For katori
1/2 cup singhara flour
1/2 cup sabudana flour
1/4 tea spoon rock salt
1 pinch baking soda
1 table spoon oil for moyan
For fruit cream
4 tea spoon fresh cream
1 tea spoon sugar
1/2 chopped banana
1slice apple chopped
1/4 cup pomegranate
For dry fruits
4-5 almonds
4-5 cashew
4-5 raisin
4-5 makhana
5-6 raw peanuts
1 tea spoon ghee
Rock Salt as per taste
Black pepper as per taste
Green coriander stem for making handle if basket.
Method
1. Take both flours.
2. Add salt, baking powder.
3. Add oil for moyan
4. Now knead tight dough.
5. Take one ball from dough and With the help of little water press and paste on back side of muffin mould.
6. Bake for 15 minutes at 180 degree.
7. In the meantime we prepare katori stuffing.
8. Take cream, sugar mix it.
9. Add fruits.
10.heat ghee and roast all dry fruits .
11 . Sprinkle salt and black pepper.
12. After baking carefully remove katori from muffin mould.
13. Fill one with fruit cream
14. Fill other with dry fruits.
15. Now adjust green coriander stem as handle of basket.

Beetroot rose mathri

Want something diffrent at festive season, then why not try beetroot rose mathri which is delicious and healthy version of normal mathri and look attract.
Ingredients
1/2 cup grated beetroot
1/4 tsp turmeric powder (optional)
1/2 cup water
2 table spoon all purpose floor
2 table spoon rawa
1/2 table spoon besan
1/2 tea spoon salt
1 tea spoon ajwain
1/2 cup oil for moyan
150 ml oil for frying

 Procedure
1. Mix grated beetroot in water.
2. Keep aside for 5 minutes.
3. Now strain it, we'll get beetroot water for kneading mathri dough.
4. Now take all purpose flour, besan,rawa.
5. Add salt, ajwain, turmeric powder,  moyan .
6. Now knead tight dough using beetroot water.
7. Keep aside for 15 minutes.
8. Now take big ball from it.
9. Roll it and from cookies cutter or glass cut into small round shapes.
10. Now take 5 small rolls.
11. Apply water over rolls and Keep one over each other from centre of first.
12. Now start rolling and maje lodge.
13. With the help of knife cut into two halves
14. In the same way make all.
15. Now dip fry in hot oil at medium flame.
16 . Mathri are ready enjoy with cup of tea or achar.

Makhana barfi

Ingredients
1 cup Makhana
1/2 cup khoya
1/2 cup sugar
1/2 tea spoon cardamon powder
2 tea spoon milk powder
1/2 cup milk
1/2 cup dry fruits for garnishing

Steps
1. Take makhana and roast for 2 minute or microwave for 30 seconds.
2. Cool and grind in mixer.
3. Now roast makhana for 2 minutes.
4 . Add khoya and milk powder and roast for 5 more minutes.
5. Add milk, cardamom powder, and sugar.
6. Cook till it becomes thik and it leaves side of wok.
7. Now pour this to greased plate.
8. Cool and cut into desired shape.
9. Garnish with dry fruits.
